This is an interesting question! I found an entry on the APA Style Blog that offers an answer. Since it is the APA site itself, we can accept its recommendation.

The blog post is called: How to Cite Course Packs, Custom Textbooks, and Other Classroom CompendiumsThis is the URL to the post: http://blog.apastyle.org/apastyle/2012/09/how-to-cite-course-packs.html

Assuming the professor has provided citation information for the source document, you can simply site that document (there's no reason to list the course pack).

If the professor has added original material, you will need to cite that. See the post for instructions on how to do that.
